Boom Baby's 'Puck' Muffins
We’re all about quick and easy here at Boom Baby. Saves you time and energy to be with your babies, which is where your attention is most needed! This recipe includes three Boom Baby pucks and gives you around 10 regular size muffins or 16 mini muffins. It’s perfect for a snack on the go, for breakfast or for those who do baby led weaning. Use any of our purée pucks to make sweet or savoury muffins, add in some spices to the plain ones to jazz it up or keep things plain Jane! Let us know what you think in the comments!
Recipe
1 cup Flour
2 tsp Baking Powder
1 tsp Cinnamon
3 Boom Baby Pucks (Sweet Potato, Carrot, Root Veggies, Bfast Squash, Beet, Borscht, Veggie Curry, Apple Sauce)
2 Eggs
2 Tbsp Avocado Oil
1 cup Flour
2 tsp Baking Powder
1 tsp Cinnamon
3 Boom Baby Pucks (Sweet Potato, Carrot, Root Veggies, Bfast Squash, Beet, Borscht, Veggie Curry, Apple Sauce)
2 Eggs
2 Tbsp Avocado Oil
Mix dry ingredients together. Add the wet ingredients and mix until just combined. Bake in the oven at 350F. For large muffins set timer for 15 minutes, for mini muffins set timer for 10 minutes. Check if they are done baking by inserting a tooth pick into the centre and if it comes out easily with no batter on it, the muffins are done!
Serve as is or with desired topping of choice.
*If using veggie curry add some wet ingredient such as water or milk to get it to that beautiful muffin consistency.
*Adding thyme,rosemary and pink salt to the Carrot or Sweet Potato would make an excellent savoury snack!
