Veggie Curry Corn Muffin
The muffin of your DREAMS!
Okay... maybe not of your dreams, but they are mouth watering, delicious, filling muffins that hold good ingredients to help your kids growing bodies! And that to me is a dream come true.
A great throw together snack for the beach, pool, walk, park, road trip... or pop some in the freezer for another day. Muffins truly are the best snack!
Recipe:
1 1/4 cups flour
3/4 cup yellow cornmeal
1 Tbsp baking powder
1 tsp salt
2 eggs
2 Tbsp honey
1/2 cup butter
7 Veggie Curry pucks
Add together your dry ingredients and set aside. In a bowl, thaw your Veggie Curry pucks. Add to that bowl eggs, honey, and butter and mix. Add in the dry ingredients and mix until blended. Line muffin tray with silicone cups and scoop the batter in. Bake at 350 for 17 minutes or until you can insert a toothpick into the muffin and it comes out clean.
